Spanish Chickpea Spinach Stew

Why I Love This Recipe

This hearty, comforting stew is a hit any time of the year. Serve it as the main dish or a side, it play well with others.

Ingredients You'll Need

1 onion, diced
4 cloves garlic, minced
2 tsp smoked paprika
1 tsp cumin
1 tsp coriander
15 tomatoes, diced
3 cups cooked chickpeas
1 cup vegetable stock
large bunch of spinach
salt to taste
pepper to taste
raisins (optional)


Heat oil in a pan over medium heat. One hot, add the onion, cooking until it is translucent.

Add the garlic, paprika, cumin, coriander and tomatoes and stir well, letting cook for 10 minutes.

Add the chickpeas and vegetable stock, stirring well. If desired, also add raisins. Season with salt and pepper. Bring to a simmer and allow to cook uncovered, stirring occasionally, until your stew has reached a desired thickness. In the last few minutes of cooking, add the spinach and allow to wilt but not overcook.

Pairs Well With

Pasta, Rice, Mashed Potatoes, Creamy Polenta or with a side of flat bread or tortillas
