Why I Love This Recipe

Today is December 6th, which is St.Nickolaas Day in the Netherlands. St. Nickolaas Dag is not complete without Speculaas. This recipe we found in one of our Dutch cookbooks called "Mama's Favorite Dutch Recipes."


Ingredients You'll Need

2 cups dark brown sugar
6 Tablespoons milk
1 teaspoon baking powder
2½ cups butter
3 teaspoons cinnamon
1 cup slivered almonds
6 cups all purpose flour
2 teaspoons ground ginger
1 teaspoon salt
3 teaspoons ground cloves
2 teaspoons nutmeg


Directions

In bowl combine milk and sugar, stir until smooth.


In a large bowl sift the dry ingredients and blend in the butter until the mixture has the consistency of cornmeal.


Add the milk and sugar mixture and almonds, mix well.


Wrap in foil or wax paper and refrigerate overnight.


Roll out dough and use Christmas cookie cutters being sure to dust well with flour so dough will not stick.


Place on greased cookie sheets, bake at 350ºF for 8 minutes or until lightly browned.
