Spiced Chicken

Why I Love This Recipe
Ingredients You'll Need
1 T olive oil
1 tsp paprika
1 tsp ground coriander
1 tsp ground cumin
1 tsp cayenne
salt and pepper to taste
4 chicken thighs
1/2 cup onion, diced
1 T fresh ginger
1 T fresh garlic
1/4 tsp red pepper flakes
1 cinnamon stick
1/4 cup dry white wine
1 tsp tomato paste
1 cup chopped tomatoes
1/2 cup chicken broth
1 cup canned chickpeas
1 lemon, cut into wedges
1 bay leaf
Directions
Combine spices and set in dish.
Rub over chicken thighs. Let stand for 5 minutes.
Heat oil in skillet over medium. Add chicken. Sauté until browned (about 5 minutes per side). Remove chicken and pour off all but 1 tablespoon drippings.
Add onion and sauté 3 minutes.
Stir in the ginger, garlic, pepper flakes and cinnamon stick. Cook about 1-2 minutes.
Deglaze with wine and tomato paste.
Add tomatoes, broth, chickpeas, lemon, bay leaf. Arrange chicken on top and simmer for 20 to 25 minutes.
