Spicy Beef and Rice

Why I Love This Recipe
I made this one day when I found out my in-laws were dropping in. I just used stuff I had in the kitchen and it turned out surprisingly good :D The measurements are just estimates of what I think I put in it, so you will probably need to adjust it to your taste :)
It serves about 4. You might need to make more if everyone is really hungry.
Ingredients You'll Need
3/4 lb ground chuck (you could use round or beef)
1.5 cup frozen chopped onion (I think that is about 1 medium onion)
1 tsp bottled minced garlic
1/2 tsp. crushed red pepper (I would use more - my in-laws aren't for real spice, but I sure am!)
1 cup shredded carrot (you could do it yourself, but I had the bagged stuff)
3/4 cup jasmine rice (my favorite variety!)
1.5 cups of water (or broth)
2 tbsp red-sodium soy sauce (you could use more, or use the reg. variety if you want)
1/3 cup chopped fresh mint leaves (YUM!)
1/3 cup chopped fresh cilantro (you could use a reduced amount of dried if you need to)
Directions
Heat a large pan over high heat.
Add the beef and do 1-2 minutes on each side without touching!!!
You might need to reduce/increase time to get the meat to brown.
Add the onion, garlic and red pepper; cook for about a minute or so.
Add the carrots, rice, water (broth) and soy sauce.
Bring to a boil and then reduce the heat to low.
Cover and simmer for 20 minutes until the liquid is absorbed (You might need to play with this the first time you try it to make sure you get the rice variety = water quantity)
Mix in the mint and cilantro and then remove from the stove.
Have it sit for approx. 10 minutes covered to make sure everything is hot and absorbed.
