Ingredients You'll Need
2 cups cooked black beans (or canned, drained and rinsed)
1 medium onion, chopped
3 cloves garlic, minced
1 jalapeño, seeded and chopped (leave seeds if you want more heat!)
1 tsp ground cumin
1 tsp chili powder
4 cups vegetable broth
Juice of 1 lime
Fresh cilantro for garnish
2 tbsp olive oil
Salt and pepper to taste
Directions
Heat olive oil in a pot over medium heat.
Sauté onion, garlic, and jalapeño until softened.
Stir in cumin and chili powder; cook 1 minute.
Add black beans and vegetable broth; bring to a boil.
Reduce heat and simmer 20 minutes.
Use an immersion blender for some creaminess, or blend half the soup and return.
Stir in lime juice and season with salt and pepper.
Garnish with fresh cilantro and serve.
