Why I Love This Recipe

This is a very simple recipe that my grandfather used to whip up as a side when he craved something with a little spice. This will feed about 6 people.


Ingredients You'll Need

1lb (2 Cups) dry Great Northern Beans, soaked overnight. (Any white bean will do, and you may also used canned beans if you like.)
1 Tbsp. Crushed red pepper flakes.
2 Cloves garlic, minced.
1/8 Cup olive oil


Directions

Simmer the beans in about 8 cups of water over medium heat until tender (40-45 minutes). Drain and save a small amount of the liquid.


In a separate, smaller pot heat the olive oil. Add the crushed pepper and garlic and let the oil infuse with the flavors of the spices. Once the garlic starts browning add the beans and the small amount of leftover liquid into the pot and stir to incorporate the oil, pepper, and garlic. Add a small amount of salt, if desired. Let the beans simmer in the oil mixture for 5 or 10 minutes, but don't burn the garlic!
