Spicy Rhubarb and Apple Compote

Great for breakfast or as a quickie simple dessert

Ingredients You'll Need
2-3 stalks of rhubarb chopped into 1 inch cubes
2 large sweet apples
1 level tablespoon of sugar
1 inch piece of fresh ginger
Juice of 1/2 a lemon
2 tablespoons of water
1/2 teaspoon of cinnamon
Peel and chop the apples and cook on the stove on a medium heat with the lemon juice and the water for about 15 minutes until it starts to soften.
Add the rhubarb, sugar, cinnamon and grated ginger and cook for a further 10 minutes until the rhubarb is softened.
