Spicy Shrimp Scampi

Why I Love This Recipe

Ingredients You'll Need

4 Tbsp Extra Virgin Olive Oil,
1/2 tbsp fresh ginger, peeled and finely chopped
3 cloves of garlic, peeled and finely sliced
2-3 fresh red chilies, deseeded and finely sliced
16 raw large shrimp peeled
1 cup White Wine
1 cup unsalted Butter do not use Margarine
3 sun dried tomatoes cut in small pieces
1-2 lemons to taste
1/2 cup good handful of parsley roughly chopped
Sea salt
Freshly ground black pepper
Optional long slices of ciabatta bread toasted


Into a large, hot frying pan put around 4 tablespoons of olive oil, your ginger, garlic, chili, sun dried tomatoes, butter and wine.

After well mixed, add shrimp.

Fry for about 3 minutes then turn the heat down and squeeze in the juice of one lemon.

Add the parsley and a couple of lugs of olive oil.

Toss over and remove from heat. The sauce may need a little more lemon juice and you can season to taste.

Serve with bread.
