The origin of this pizza was Jackson's birthday when I offered him a three course meal of his choice. He really wanted my coconut miso salmon curry as the entree, but he also really wanted my vodka sauce pizza as the appetizer. Those don't really pair well, so I was tasked with coming up with a pizza that would go well with the curry. So I did some digging online, and found an article on SpicySouthernKitchen.com for a Thai Chicken Pizza (a dupe on the CPK version). I used that as my base, cross referenced a handful of other links, and of course put my own touch on it
Ingredients You'll Need
SPICY PEANUT SAUCE
about two heaping spoonfulls of creamy peanut butter
Oyster Sauce
Fish Sauce
Liquid Aminos or Soy Sauce
minced ginger
minced garlic
sesame oil
Mirin
Dried Red Pepper Flakes
Cayenne powder
water to thin it out at as needed
Yuzu hot sauce or anything spicy
FOR THE PIZZA
1 tablespoon olive oil
finely chopped grilled/slow cooker chicken breast or pre-cooked chicken strips
pizza dough
2 cups shredded mozzarella cheese
2 green onions, slivered diagonally
1/4 cup shredded carrot
2 tablespoons chopped roasted peanuts
2 tablespoons chopped fresh cilantro
Directions
Preheat oven to whatever the packaging on the pizza dough instructs, about 450. Mix all the ingredients for the sauce and taste to adjust as needed.
Roll out dough onto a pizza baking sheet. Put a healthy amount of sauce all over the pizza, with the exception of the edges to create a crust. Soak your chicken in any remaining sauce. Add half of your cheese onto the pizza, then the chicken, then carrots and peanuts, then more cheese
Brush the pizza crust with homemade garlic Thai basil butter (melt about 1/3 stick of butter and add minced garlic and dried Thai basil)
Place in oven for 10 mins, then remove to brush crust with butter mixture again. Place in the oven for remaining time (likely another 10 mins, but follow instructions on your pizza dough packaging, or keep an eye on it until the color looks right
Remove from oven, and garnish with chopped cilantro. Let cool, and then serve
