Why I Love This Recipe

In my effort to learn how to cook ethnic foods, I am endeavoring to tour the culinary world this year. My trek begins in Asia, Thailand specifically. I always order Thai fried rice, so now I've learned to cook it. Thai food, surprisingly, is very easy and quick.


Ingredients You'll Need

1 tsp white sugar
3 tbsp oyster sauce
2 tbsp fish sauce
1/2 cup peanut oil
6 garlic cloves
2 serrano peppers, crushed
1 lb chicken (thin strips)
1 red pepper, thinly sliced
1 onion, thinly sliced
1 cucumber
1/2 cup cilantro


Directions

Whisk oyster sauce, fish sauce and sugar together


heat oil until it smokes, add garlic and serrano peppers


Stir in chicken, bell pepper, onions and sauce


Stir in chilled rice when chicken is cooked


Stir in chopped cilantro as a last step, add fresh ground pepper


*use jasmine rice for traditional thai fried rice


*could skip the sugar, the oyster sauce is already pretty sweet


*introduce new vegetables for a new twist, like asparagus


*can substitute pork or beef for chicken


*consider adding scrambled egg for a different texture
