Ingredients You'll Need
2.5lb pork butt
1 tbsp salt
1 tbsp pepper
1tbsp fennel
.5tbsp paprika
1tsp crushed red pepper
1/4 tsp coriander
1c ice
Directions
Cut pork to 2in cubes
combine pork with spices
Grind meat through a coarse grind, adding the ice as the meat passes
mix grind until homogenous
stuff sausages
