Why I Love This Recipe
This dish was inspired by the cat in the window of the angling shop, my love for roasted peanuts and the fact that I was on my way to buy Thai fish sauce. The outcome was a quick and easy salad.
Ingredients You'll Need
500 grams big prawns
salt
1 red bell pepper, in small cubes
2 tablespoons chives, chopped or chopped spring onions
2 tablespoons roasted peanuts
For the dressing
2 tablespoon Thai fish sauce
2 tablespoon lime juice
2 tablespoons of water
2 teaspoons of sugar
1 teaspoon either sweet chilisauce or hot chilisauce [I like it hot]
2 cloves of garlic, squeezed
2 Spanish red or green peppers, finely chopped
2 tablespoons of basil, chopped
Directions
1 Roast the peanuts in a skillet with a bit of oil until golden, drain and sprinkle with salt
2 Mix the ingredients for the dressing
3 Boil the prawns for a very short time in slightly salted water
4 Cool them off in ice water and drain well
5 Mix the prawns with the dressing and put them on a plate
6 Decorate with the bell pepper cubes and peanuts and sprinkle the chives over it.
