Spinach Arugula Salad
Why I Love This Recipe
I found this recipe online, and I fell in love with it. It tastes like a salad you would order at a high end restaurant.

Ingredients You'll Need
1/2 cup raw pecans
3 cups organic arugula spinach blend
1 Granny Smith or other tart apple, sliced
1/4 cup sliced red onion
2 Tbsp dried cranberries
Crumbled Feta cheese or goat cheese (optional)
3T fresh lemon juice
1 Tbsp maple syrup
3 Tbsp olive oil
Salt & pepper to taste
Preheat oven to 350 degrees F
Bake pecans on a baking sheet for 8-10 minutes.
In a serving bowl, whisk together all dressing ingredients. Prepare and add all salad ingredients to the dressing mixture.
Add the pecans and toss to combine.
