Why I Love This Recipe

This was a favorite of mine as a kid and although it does have a bit of cheese in it...it also has spinach and onion which is kind of snuck in there. My six year old loves this. It takes about 15 minutes to assemble and 30 to bake.


Ingredients You'll Need

1 pkg. frozen chopped spinach
1 cup sour cream or yogurt
2 cups shredded monterey jack cheese
2 cups cooked spaghetti
1/2 cup parmesan cheese
2 teaspoons minced onion
2 eggs slightly beaten


Directions

Pre-heat oven to 350.


Cook and drain spinach.


Combine eggs and sour cream (yogurt), 1/3 c, parmesan cheese and onion.


Add jack cheese, spinach and spaghetti.


Put mixture into baking dish.


Sprinkle remaining parmesan cheese on top.


Bake covered for 15 minutes. and then uncovered for 15 minutes until heated through.
