Spinach Mushroom Egg Scramble

Ingredients You'll Need
Large handful of spinach leaves
Shredded cheddar & Monterey Jack Cheese
Course ground Salt & Pepper
Whisk 3 eggs in a separate bowl with a dash of water, set aside.
Sauté mushrooms in butter & oil until mushrooms are browned
Add in spinach leaves and work into the mushrooms - sprinkle on salt and pepper as desired
Once spinach is wilted (about a minute or 2), add in the eggs over top of everything.
Sprinkle on the cheese, divide in half for each plate
For sides, we had sliced tomatoes with a dollop of hummus and toast.
