Spinach Quiche

Ingredients You'll Need
3 oz cream cheese, softened
1 cup half and half
1/2 cup soft bread cubes
1/4 cup grated parmesan cheese
2 eggs, slightly beaten
1 10 oz package frozen chopped spinach, thawed & drained
1/4 cup butter
1 large onion, chopped
1/2 lb fresh mushrooms, sliced
1 unbaked pie shell
Directions
mash cream cheese, add half and half and bread cubes, Parmesan cheese and eggs. beat to break up bread cubes. Stir in spinach. Melt butter and sauté onions and mushrooms until tender and then add to spinach mixture. Pour into pie shell. Bake at 400 for 25 minutes. Let stand 10 minutes before cutting.
