Spinach Salad with dried cranberries, red onion, walnuts, and feta

Spinach salad is a nice change of pace, and this combination of flavors is delightful.
Ingredients You'll Need
For the Salad:
16 oz. package spinach
1/2 c. dried cranberries
1/2 red onion, thinly sliced
1/2 c. toasted walnuts
1/2 c. feta, crumbled
For the dressing:
2 T. blood orange vinegar
2 T. orange juice
1 t. orange zest, finely chopped
1/2 c. EVOO
Directions
Toast walnuts on a baking pan in an oven preheated to 375F for 5-10 minutes until fragrant. Remove from the oven, and set aside. In a salad bowl, place washed spinach. Top with red onion slices, cranberries, toasted walnuts, and crumbled feta. In a jar or dressing cruet, mix together blood orange vinegar, orange juice, and zest. Shake together well. Add EVOO and shake until well blended. Serve with salad.
