Why I Love This Recipe

Ingredients You'll Need

Layer 1
3 pkg. chopped, frozen spinach, thawed & drained well
4 TBSP. chopped onion
2 1/2 c. shredded cheddar cheese
1 3/4 TBSP. lemon juice
Mix all ingredients together

Layer 2
12 oz. sliced mozzarella cheese
Fresh sliced tomatoes ( I just wing it...apprx. 3 large) you can use canned if you like
4 oz. mushroom pieces ( I use 2 boxes sliced fresh)
1 large red onion, sliced and seperated
chopped parsley, fresh
Mix all ingredients together

Layer 3
10 eggs, slightly beaten
6 c. milk (48 oz)
1/4 tsp. oregano
Mix all ingredients together

Parmesan Cheese
2 loaves thinly(if you can find it) sliced and crusts removed


Butter (chafing dish size pan) pan well. Cover bottom with 1 layer of read, add #1 layer, repeat with bread layer. Add #2 layer, repeat with bread layer. Sprinkle with parmesan cheese. Pour layer #3 over all. Refrigerate over night

Dot with butter and bake uncovered 1 -1 1/2 hours at 325. Cover loosly with foil if edges brown to quickly.
