Why I Love This Recipe

I first had this at a catered company dinner 10 years ago. I searched for a recipe that looked similar, but they all called for too many different veggies and not nearly enough cheese. Everything is better with more cheese. After a while I finally came up with this recipe. Everytime I bring this to a potluck someone asks for the recipe. Sometimes I through cooked chicken in there if I have some left over.

Ingredients You'll Need

2 lbs summer squash, sliced
2/3 cup chopped onions
1 1/2 to 2 cups cheddar cheese, shredded
16 oz sour cream
1 can cream of chicken soup
1 stick of butter
1 box stuffing mix


Cover squash and onions with water in pot and boil until soft.

Drain well.

Mix Cream Soup, Cheese, and sour cream in mixing bowl.

Mix in squash mixture.

Melt butter in pot, pour stuffing mix into melted butter.

Put half of the stuffing mix evenly in a buttered casserole dish (11x14 ish). Spread squash filling evenly over stuffing mix.

Spread remaining stuffing mix on top.

Bake at 350 for 30 minutes.
