Why I Love This Recipe

Ingredients You'll Need

2 cups cooked yellow squash
1 can cream of chicken soup
1 cup grated carrots
salt and pepper
1/2 stick butter
2 tablespoon dried minced onion
1 cup sour cream
1 - 8oz bag cornbread stuffing


Mash squash and stir in onion, soup, sour cream and carrots.

Salt and pepper to taste.

Sprinkle a layer of stuffing mix in a buttered 2 quart casserole.

Add squash mixture and cover with remaining stuffing mix.

Dot with butter.

Bake in a preheated 350 degree oven for 30 minutes.

**This freezes well.
