Squashy Casserole

Why I Love This Recipe
Good for when you have a bunch of squash growing in the garden
Ingredients You'll Need
2 small yellow squash, shredded yielding 2 cups
2 small zucchini, shredded yielding 2 cups
3 cups boxed stuffing mix
1/4 cup butter melted
1 can cream of chicken soup
1/2 cup sour cream
1/4 cup shredded carrot
1/2 cup shredded white cheddar cheese
Directions
Preheat over to 350
mix stuffing and butter reserve about 1/2 cup aside. Spon rest into 2 qt baking dish
mix soup, sour cream, squashes and carrots and cheese. spread over stuffing and top with reserved stuffing mixture.
Bake for 40 minutes
