Dry Rub:
1 T. chili powder
1/2 t. chipotle chili powder (OK without, or add 1/2 T. of favorite steak rub
1/2 t. cumin
1/2 t. paprika
1/2 t. onion powder (OK to add garlic instead)
1/8 t. dried oregano, crushed between your fingers
dash of cayenne pepper
1/2/ t. kosher salt
1/4 t. black pepper
1/2 t. dark brown sugar
1 flank steak
Pepper and Onion topping:
1 T. olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 medium red onion, sliced
1 jalapeno, sliced
Avocado Lime Crema:
1 avocado, smashed
1/4 C. light or non-fat sour cream
zest of 1/2 lime
1 t. chopped cilantro
1 jalapeño, grated
2 t. lime juice OR juice from one whole lime
1/4 t. salt
dash of black pepper
1 pkg. fajita size tortillas
Directions
1. Preheat the Cuisinart Grill to "sear"
2. Make the dry rub, rub into meat ** NOTE: this step can be done ahead of time. Can even let the meat sit with rub in fridge overnight **
3. Heat oil in pan and saute peppers with onion
4. Cook steak according to the directions on Cuisinart (depending on meat thickness, etc)
5. Let meat stand in foil for 10 minutes before slicing
6. While meat stands, create crema by adding together all the ingredients ** NOTE: this can also be done ahead of time and kept in the fridge **
