Why I Love This Recipe

These are so delicious and easy! I usually forgo any sides and just serve a couple of tacos each!

Ingredients You'll Need

12-18 fresh corn tortillas
3 New York strip steaks (or steak of choice)

Taco Steak Rub:
2 Tbsp chili powder, 1 tsp cumin, 1 tsp oregano, 1 tsp garlic powder, 1/2 tsp salt, 1/2 tsp pepper - adjust seasoning to taste, but don't leave out oregano

Avocado Oil (for drizzling over steaks after seasoning)

2 avocados
1 clove garlic, minced
1 Tbsp lemon juice, freshly squeezed
2 Tbsp sour cream

Pico de Gallo:
1 med red onion, diced small
2-3 med vine ripe tomatoes, diced small
1 clove garlic, minced
1-2 Tbsp fresh cilantro leaves, finely chopped
1/2 jalapeno, very finely chopped (or more if you like it spicy)
1/2 lime juice, freshly squeezed
1/2 tsp salt
1/2 tsp pepper

grated cheddar or monterey jack or a mixture of both
shredded lettuce


For Pico de Gallo, combine tomatoes, onion, cilantro, garlic, jalapeno, salt & pepper, and lime juice. Stir and set aside for flavors to meld.

For the guacamole, use a hand blender to mash avocado add minced garlic, lemon juice and sour cream until smooth. (I do this while steaks are being grilled so that the avocado doesn't brown)

Grill the seasoned steaks for 4 min per side for medium rare, adjust time per side by your doneness preference.
Let rest on cutting board for 5 minutes.

Make one lengthwise cut per steak, and then slice across the two pieces making thin strips.

While the steaks are on the grill, warm fresh corn tortillas on a flat grill until they start to brown and shrink a little. They should have little brown spots on them when done.

Put the tacos together by first lathering guacamole on the warm tortilla shells laid flat on the plate. Top with a layer of steak. Top with Pico de Gallo, cheese, and lettuce.
