6 large green bell peppers
1 lb ground beef
1 cup cooked rice
1 small onion, chopped
1 clove garlic, minced
1 can (15 oz) diced tomatoes
1/2 cup tomato sauce
1/4 cup shredded mozzarella cheese
2 tbsp olive oil
Salt and pepper to taste
Directions
Preheat oven to 375°F. Cut the tops off the peppers and remove the seeds.
In a skillet, heat olive oil and sauté onion and garlic until softened.
Add ground beef and cook until browned. Stir in cooked rice, diced tomatoes, tomato sauce, salt, and pepper.
Stuff each pepper with the beef mixture, place in a baking dish, and bake for 30-35 minutes.
Top with shredded mozzarella during the last 5 minutes of baking.
