Steph's Tangy Chicken Dish

Ingredients You'll Need
¾ cup Rice Vinegar
½ cup Soy Sauce
1 tbsp Honey (add more if you want it a little sweeter. Up to your taste preference)
6 Garlic Cloves (smash with back of knife)
4 Bay Leaves
4 lb. skin on, bone in chicken thighs
Green Onion (Garnish)
Directions
In a large bowl, whisk together vinegar, soy sauce and honey
Stir in the garlic, bay leaves and pour into zip-loc bag
Add chicken and place in refrigerator to marinate, at least 30 minutes or you can marinade overnight if you want. Either time frame works
Preheat oven to 300
Pour chicken and marinade into heavy bottomed pot and cover. I use a Le Creuset Dutch Oven but any heavy bottomed pot and cover that’s oven friendly should do
Place in oven and bake for 40 minutes
Take out after 40 minutes to stir the chicken and sauce then return to oven for another 40 minutes
When chicken is done cooking (about 80 minutes), remove from pot and place on a foil or parchment paper lined baking sheet. Keep the sauce in the pot.
Turn oven to 450 and bake the chicken until it’s golden brownish (about 5-8 minutes)
Heat sauce in pot and let simmer while chicken is browning (8-10 minutes). Return chicken to pot.
Pairs Well With
You can garnish this with green onion and serve over rice. I usually also roast or steam broccoli or broccolini with this meal. Or you can do whatever veggie you prefer. It’s super good with anything!
