Steve's Bean Soup - Updated

Why I Love This Recipe
This makes a good amount of soup and freezes well. Also, letting it sit in the refrigerator overnight enhances the flavor.
Ingredients You'll Need
1 lb navy beans
4 cups chicken broth
1 package smoked pork hocks or a ham bone
1 lb carrots
1 lb cubed ham
1 tsp chili powder
salt & pepper
Soak beans in water overnight. Next day discard the water.
Combine 4 cups chicken broth, 6 cups water, ham hocks (or ham bone), onion, beans
Simmer for 1 1/2 to 2 hours
Add carrots, potatoes, ham cubes and seasonings. Continue simmering for another hour ( or longer ) and remove ham hocks.
