Strawberry Spinach Salad

Ingredients You'll Need
Dressing:
1 cup white balsamic vinegar
1 ½ cups olive oil
3 cloves garlic
Juice of one lemon
1 Tbls. Dijon mustard
Candied Walnuts:
1 bag walnut halves
3 Tbls. butter
3 Tbls. sugar
2 Tsp. cayenne pepper
Salad:
1 bag baby spinach
1 head green leaf lettuce
1 pint strawberries, sliced
1 large cucumber, sliced
1 pint grape tomatoes
1 cup gorgonzola cheese, crumbled (reserve half)
Directions
Dressing:
Combine garlic, vinegar, juice, mustard, and salt and pepper to taste in a blender or food processor. Blend
on low speed, adding oil slowly in a very thin stream. Continue until all oil is combined and dressing is creamy.
Candied Walnuts:
Blanch nuts in melted butter over medium heat. Toss warm nuts in a plastic bag with sugar and cayenne
pepper until well coated.
Salad:
Combine all ingredients in a large bowl, toss with dressing.
Plate and sprinkle with reserved gorgonzola. Top with candied walnuts.
