Why I Love This Recipe

This stuffed fenugreek leaves millet flour bread (Bajra na rotla) is my favorite because it's gluten free recipe, easy to make it with minimal ingredients and it has no onion - garlic. Millet flour is a full of nutrition and easy to digest. My family love this stuffed bread.


Ingredients You'll Need

Stuffing:

Approximately 3 cups roughly chopped fenugreek leaves (I used one whole bunch)

4 green chillies (change it according to your taste)

1tbsp Cumin seed (Jeera)

½ tbsp Coriander Cumin powder (Dhaniya Jeera Powder)

½ tsp salt

1tbsp+ ½tsp oil

Millet Flour flat bread:

1 cup Millet flour (Bajra flour)

1/8tsp salt

Water as needed


Directions

Heat oil in a medium pan on medium flame. When oil is hot enough, put cumin seeds and let it splutter. Do not allow cumin seeds to burn. Once cumin seeds are turned in light brown add finely chopped green chillies. Let it cook for a few seconds and add Fenugreek leaves. Stir the Fenugreek leaves for 2 minutes. Let the oil get separated from the leaves. Add salt and dhaniya jeera powder and stir well. Turn off the flame and let the stuffing cool down completely.

While stuffing is getting cool down, take the flour in a bowl. Add salt and knead the dough with water (approximately ½ cup) for at least for 5-7 minutes. Pinch two medium size balls for the bread. Use Bajra flour for dusting. Cut the parchment paper and dust with bajra flour and tap the dough ball with your fingers. Keep dusting the dough roll to avoid stickiness. Once the bread turns into a small circle, add the stuffing in the center of the bread. Gently grab the edges and seal to form a tight ball. Take some flour for dusting on the parchment paper and tap evenly and make medium size thin flat bread. Instead of tapping you can gently roll this bread with the roller too. Put the bread on tawa and let it cook one side completely on medium flame. Flip the bread to the other side and let it cook on medium flame. Once the both sides are cooked add little oil or ghee (butter) and cook both sides again on medium low flame. Repeat and make bread with the remaining flour and stuffing.

Serve this yummy bread with Jaggery, pickle and yogurt or with masala butter milk.
