Stuffed Meat Loaf

Ingredients You'll Need
1/2 cup Onion, Cooked
1/2 cup Red Bell Pepper, Finely Chopped
1 tsp Adobo Seasoning (or Garlic Salt)
2 Eggs
3/4 cup Bread Crumbs
1 1/2 lb Ground Beef
3/4 tsp Black Pepper
1 package Frozen Spinach, Thawed & Drained
1 cup Shredded Mozzarella Cheese
4 oz Thin Slices Salami (about 20 Pieces)
Directions
*Combine all but spinach, cheese, and salami; Mix well and press out into 17x8 rectangle on wax paper
*Layer spinach, cheese, and salami; roll up meatloaf jelly roll style into 8-inch log
*Place foil in your crockpot - enough out of the edges so you will be able to lift out the meatloaf when it is done
*Spray foil with non-stick cooking spray; place meatloaf in crockpot
*Cook on high 3 hours or on low for 10-12 hours
*Remove and let cool 10 minutes before slicing
