Stuffed New Potatoes

Ingredients You'll Need

10 bite sized new potatoes
1 tablespoon fresh chives, chopped1/4 cup cheddar cheese
2 tbsp butter
1 tbsp sour cream
2 tbsp real bacon bits
pinch of salt and pepper


Boil potatoes, covered with water for 20 minutes.

Remove potatoes and let cool.

Cut 6 of the potatoes in half, then cut a sliver off of the bottom of each so that they lay flat, halved side up.

Using a melon baller, scoop flesh from potato halves into a mixing bowl, making little potato cups with sides about ¼ inch thick.

Mash potatoes well with a fork, add chives, butter, sour cream, bacon, salt and pepper.

Mix well.

Spoon heaping amount of filling into each of the potato cups.

Place potatoes on baking sheet and bake at 400 degrees for about 15 minutes, or until golden. Sprinkle each serving with cheese.

Serve warm
