Stuffed Pepper Soup/ Dirty Rice

Why I Love This Recipe
I sometimes add extra rice to this to get more of a dirty rice, but I love this to take to work for lunch, it's comfort food yet still pretty healthy.
Ingredients You'll Need
1 pd ground sirloin (I've used ground turkey or venison as well)
1 chopped green pepper
1 finely diced onion
1 29oz can of diced tomatos
1 15oz can of tomato sauce
1 14oz can of chiken broth
1/4 teas. thyme
1/4 teas sage
salt and pepper to taste
1 cup white rice
sour cream (optional)
Directions
in a pot cook beef, green pepper and onion until onion is translucent
add all other ingrediants except rice cover and simmer for 30 to 40 min
boil rice in seperate pot, drain and add to soup after it has simmered
(If I want more of a dirty rice consistancy I'll add about a cup and a half of uncooked rice so that it soaks up more of the liquids, if you want more of a soup add only one cup of rice already cooked)
