Why I Love This Recipe

Even if you don't like zucchini, you've got to try this - delicious. Tastes like apple cobbler!

Ingredients You'll Need

8 cups peeled, chopped, and seeded zucchini
2/3 cup lemon juice
1 cup sgar
1 tsp nutmeg
1 tsp cinnamon

For crust:
4 cups flour
2 cups sugar
1 1/2 cup cold butter


In large saucepan over med-low heat, cook and stir zucchini and lemon juice for 20 minutes or until tender. Add sugar, nutmeg and cinnamon. Simmer for 1 minute longer; remove from heat.

To make the crust, combine the flour and sugar; cut in with butter until mix is like coarse crumbs. Stir 1/2 cup crust mixture into zucchini mixture. Press 1/2 of the remaining crust mixture in a greased 15x10x1 inch baking pan. Spread zucchini mix over top and then crumble the rest of the crust over this.

Bake at 375° for 35-40 minutes.
