Why I Love This Recipe


Ingredients You'll Need

½ cup shortening
1 egg
½ cup brown sugar
½ cup white sugar
½ tsp vanilla
¾ cup flour
½ tsp salt
½ tsp baking soda
½ tsp nutmeg
½ tsp cinnamon
1 cup coconut
½ cup walnuts, raisins and choc chips (more if desired)
1 ½ cups oatmeal


Directions

Preheat oven to 350 degrees. Cream shortening, egg, sugars and vanilla. Add flour, salt, soda and spices. Stir in coconut, walnuts, raisins, choc chips and oatmeal. Batter will be stiff. Drop onto ungreased cookie sheet (use parchment paper or a baking stone) and bake for 13-15 minutes until light brown. Be careful not to overbake. Makes about 2 dozen cookies. Can be doubled.
