Why I Love This Recipe

A good pasta recipe that serves many and for long. It is pretty quick and will leave you satisfied after. This is my nutrient lab recipe.

Ingredients You'll Need

16 ounce gemelli
8.5 ounce sun dried tomatoes
2 garlic cloves
1 cup fresh basil
1/4 teaspoon red pepper flakes
1 1/2 cups fresh baby spinach
1/4 cup grated Parmesan
Kosher salt
Fresh ground black pepper


Cook pasta in salted water

In bowl of food processor, pulse the tomatoes. Add garlic basil and red pepper flakes. Season with salt and pepper. Pulse until the mixture resembles pasta

Drain the pasta, reserving the 1 cup. Return the pasta to heat and stir in spinach, sun dried tomato pasta and the reserved water. Stir until spinach wilted. Then add Parmesan cheese.

Serve with sprinkle of chopped basil and more Parmesan if desired.
