Why I Love This Recipe

This recipe was passed to me by a dear friend. The cake is old fashioned in that it is moist and heavenly. My friend is gone but I think of her every time I make this cake. Enjoy

Ingredients You'll Need

2 C. sugar
2 C. flour
2 t. soda
2 eggs
1/2 t. salt
1 t. vanilla
2 T. vegetable oil
1 C. chopped pecans
1 20 oz. can crushed pineapple (do not drain)
1 8 oz. pkg. cream cheese
4 T. butter
1 C. brown sugar
1 t. vanilla

Directions

Mix sugar, flour, soda, eggs, salt, vanilla, oil, pecans and pineapple.

Bake at 350 degrees in a 9 x 13 pan for 40 minutes or until cake springs back (or you determine cake is done.)

Last 10 minutes of baking time melt cream cheese and butter.

Add brown sugar and vanilla.

Mix well with spoon and pour over cake while cake is hot. Allow frosted cake to cool and serve to an appreciative audience.
