Sweet Persimmon Side

Why I Love This Recipe
A co-worker of mine brought in a huge bag of persimmons. Thinking way back in the past how I would be forced to try them at my ex boyfriends house and hated every stinking bite. I thought about it for awhile and said to myself, I am a new woman with very different taste buds now; I want to give them a try.
So to make a long story short, I freaking love them! I made up a recipe and it turned out so good. I don’t think it is for everyone but Mike and I enjoyed it. Not that we have sophisticated palettes or anything but I think this would be a wonderful Thanksgiving side dish or severed with some sort of meat dish like turkey, Cornish hen, or even duck – YUM! This is a sweet dish so keep that in mind. Who knew cooking with fruit would be so yummy!
Ingredients You'll Need
3 Persimmons
3 Tomatoes
1 Med. White Onion
2 ¼ tsp Brown Sugar
2 ¼ tsp Salt
1 TBS Olive Oil
1/8 tsp of Nutmeg
Pepper to taste (this will even out the sweetness)
Directions
1. Chop Persimmons, tomatoes, and onion in thin long think strips
2. Hit a large frying pan with Olive Oil
3. Add Persimmons and onions, cook until slightly soft
4. Add tomatoes and add all spices. Mix and cover until tomatoes are soft
Serve Hot
