Sweet Potato Cranberry Apple Saute

I got this from halfmysize.com which I found about from somebody on bakespace. Thank you so much for letting me know about that site. I love the pics and healthy recipes. This is a wonderful recipe. I added small amount of saigon cinnamon and a couple T of butter. However, its really good without the butter too. This is going to be a frequent fall flyer at my house. Can't beat this yummy and healthy combo. Colorful too :-)
Ingredients You'll Need
3/4 cup apple juice
1 pound sweet potatoes, peeled and cubed
1 large granny Smith apple, peeled and coarsely chopped
1/4 cup dried cranberries
2 Tablespoons maple syrup
1/4 teaspoon salt
2 Tablespoons chopped walnuts, toasted
Directions
In a skillet heat apple juice. Add sweet potatoes; cover and cook over low heat about 12 minutes or until potatoes are nearly tender. Stir in apple, cranberries, maple syrup and salt. Cook, covered, over low heat for 3 to 4 minutes or until apple is just tender. Uncover; boil gently for 3 to 4 minutes or until liquid is syrupy. Place in serving bowl and sprinkle with chopped nuts.
