Sweet Potato Palak

"Sweet potato replaces the paneer in the classic Indian dish, Palak Paneer."

This is a veganized version of a classic Indian dish that many will recognise from their favourite Indian take-away menu. The paneer has been replaced with sweet potato, but otherwise the dish is true to the original. Hearty, healthy and delightfully delicious!
Ingredients You'll Need
1 onion, diced
4 medium sweet potatoes, cut into bite size pieces
large bunch of spinach
12 tomatoes
4 cloves garlic
1.5 inch piece of ginger
2 Tbsp garam masala
2 cups coconut milk
1/4 cup water
salt to taste
pepper to taste
Directions
Heat oil in a pan over medium heat. One hot, add the onion, cooking until it is translucent.
Add the sweet potato and cook, covered, for about ten minutes or until the sweet potato is soft.
While it is cooking, in a blender combine the spinach, tomatoes, garlic, ginger, garam masala, coconut and water. Blend until well incorporated.
Add the blended mix to the onions and sweet potato. Bring to a simmer and cook, covered, for approximately 30 minutes.
Feel free to add more spinach to the mix for the last few minutes so that it wilts but is not over-cooked.
