The amount of pesticides and chemicals that can seep into a potato through the skin is incredible. Even when washing the surface of a conventionally grown potato you will still miss a large percentage of the pesticides that have already penetrated the surface.
Ingredients You'll Need
Ingredients: (Makes 2 stackers)
1 Large Organic Sweet Potato
2 Organic Eggs
1 Med Avocado
1 Sliced Organic Tomato
1 tsp Celtic Sea Salt
Course Ground Pepper
Paprika
1 tbs Olive Oil

Directions:
Wash and Slice the Sweet Potato
Heat a large pan with Oil on medium heat
Season the sweet potatoes with salt, pepper and paprika on each one and place them in the pan (not piled but separated for even cooking) Pan Fry 6-7 minutes each side but watch for burning ! Cooking times will vary depending on the thickness of the slices
In a separate bowl, cut and remove Avocado from skin and mash it with a fork. Add a small pinch of salt and pepper and mix.
In a separate small pan on medium heat, add a drop of Olive Oil
Crack Eggs in pan and fry them on either side to your preference ( I like them slightly runny for these stackers!)
Once the sweet potatoes are cooked through and have a nice crispness on the outside - allow them to cool slightly and start stacking!
