Why I Love This Recipe

The perfect sweet bread to add to your go to recipe list. A wonderful addition to just about any meal.


Ingredients You'll Need

1 can of sweet potatoes (15oz, drained)
2/3 cup raw turbinado sugar
1 cup all purpose flour
1 cup yellow cornmeal
1/2 tsp baking powder
1 egg
1 cup buttermilk
1/2 tsp salt
1 cup confectioners sugar
2 tbsps oranje juice
1 tbsp honey


Directions

Preheat oven to 400 degrees F.


Bread:


Grease loaf pan with butter or oil.


Melt butter in a large skillet. Remove from heat and stir in sugar until melted.


Add buttermilk and baking soda to skillet and mix well. Pour mixture into a bowl.


Temper eggs with 2 tablespoons of the buttermilk mixture.


Fold in cornmeal, flour and salt.


Add sweet potatoes and beat until batter is smooth with few lumps (hand mixer recommended).


Let sit for 3-5 minutes. Pour into loaf pan and bake for 35-45 minutes or until golden brown or toothpick inserted in center comes out clean.


Allow to cool before proceeding to next step.


Drizzle:


Mix confectioners sugar, orange juice and honey until smooth.


Once bread has cooled to touch (slightly warm) remove from loaf pan and set on serving dish.


Drizzle sugar mixture over bread, cut and serve.
