Sweet and Sour Pork (or chicken)

Ingredients You'll Need

1/2 cup all-purpose flour
1/2 teaspoon salt
1 pound lean pork or chicken breasts, cut into 3/4 inch cubes
1 well-beaten egg
1/2 cup sugar
1/2 cup vinegar
1/3 cup pineapple juice
1/4 cup catsup
1 teaspoon soy sauce
2 Tablespoons cornstarch
2 Tablespoons cold water
1 cup pineapple chunks, drained
1 medium green pepper, cut into 1/2 inch pieces
1/2 onion, cut into 1/2 inch pieces
Hot rice


Directions

Combine flour and salt. Dip pork or chicken into beaten egg and then flour mixture, coating each piece well. Fry in deep hot fat until browned and done, about 6 to 8 minutes. Drain on paper towel and keep warm.


In a saucepan combine sugar, vinegar, pineapple juice, catsup and soy sauce; bring to a boil. Blend cornstarch and cold water together; gradually stir into pineapple juice mixture. Continue cooking, stirring continuously until mixture in thickened and bubbly. Stir in onion, green pepper, pineapple and pork/chicken. Heat, stirring continuously till heated through about 5 minutes. Serve with rice.
