Swiss Chard & Lentil Soup à la Chez Haddadies

FEATURING: Swiss chard (and/or kohlrabi leafs or other green of your choice) & onions
A former CSA basket member of ours shared this soup recipe with us one day as it was simmering on her stove top. She mentioned it was her 6 year old's favourite soup! We tried it and we liked it too! It is a real simple and easy soup that can accompany most meals or that you can eat just like that!
Ingredients You'll Need
1 bunch of Swiss Chard (6 leaves) - and/or you can also add in some kohlrabi leafs or other leafy green of your choice, if you want
1 cup of dried green lentils
5 cups of water
2 medium onions
1 tsp of salt
1/4 cup of extra-virgin olive oil
1 tsp garam masala or ground coriander (I use ground coriander but the Haddad's mentioned they prefer it with garam masala)
Directions
Rinse the lentils and set to boil in a large pot with the water. While that's heating half the onions and slice them, add to the lentils and lower to simmer. Wash the chard, separate leaves from stems. Cut stems into 2 cm sections, throwing out the very bottom pieces, add to soup. Cut the leaves into approximately 1 cm ribbons, again add to soup. Add salt, oil, spices, stir and let simmer until the lentils are to your desired softness - I find about 30-40 minutes does it for me. Enjoy!
