Swiss Chard Tahini Dip

Why I Love This Recipe
FEATURING: Swiss chard (or other leafy green of your liking) and garlic.
An easy and refreshing dip. Serve it with vegetable sticks (ex: rabioles, cucumbers, carrots, etc.) and/or pita or tortilla chips. Want more? Double or triple the recipe!

Ingredients You'll Need
2 Swiss chard leaves, chopped in thin ribbons
2 tablespoons olive oil, divided, plus more, if needed
2 garlic cloves, finely chopped
1/4 cup tahini
2-3 Tablespoons of fresh lemon juice, or to taste
Salt, to taste
Fresh veggie sticks and/or toasted flatbread/pita bread/tortilla chips and lemon wedges (for serving)
Directions
Heat 1 Tbsp of oil in a large pot over medium-low. Add garlic; cook, stirring, until fragrant, about 1 minute. Add chard leaves by the handful, letting them wilt before adding more; cook, tossing, until all the leaves are wilted and tender, 7–12 minutes total. Let cool. Squeeze excess liquid from mixture into a measuring glass, if any.
Place Swiss chard mixture in a food processor and add tahini, lemon juice, and 1 Tbsp of oil. Season with salt and process, adding more a bit of water, if needed, until dip is creamy and only speckles of chard remain. This could take up to 5 minutes. Season with more salt if needed. Add a bit more lemon, if needed.
Transfer dip to a serving bowl and drizzle with more oil. Serve with flatbread and lemon wedges.
Do Ahead: Dip can be made 3 days ahead. Cover and chill.
