"A good way to get your greens"

Serves 4 | Prep Time 1/2 hour | Cook Time 1 hour

A family favorite


Ingredients You'll Need

1 small onion, diced
3 big cloves of garlic, chopped
1 bunch swiss chard or bok choy
4 cups vegetable or chicken broth
1 small can whole tomato's or 1/2 28 ounce can
tiny meatballs, home made or store bought
1 tbs butter
salt and pepper to taste
EVOO
!tsp dried basil, parsley any herbs you choose


Directions

rinse and chop greens using leaves and stalks.
sweat the onions in the butter and olive oil until they start to turn translucent, add garlic and saute until it starts to brown
add tomatoes and cook down a bit.
add the broth and bring to boil, add greens and turn down to simmer
start adding meatballs, rolled very tiny, as many as you want. I use about 1/3 pound total.


add salt and pepper to taste, add a tsp dried basil or parsley and let it simmer for an hour or more
