Ingredients You'll Need

3 c. fresh corn, cut from cob
1 (5 1/3 oz.) can evaporated milk (2/3.c)
1 egg, beaten
2 Tb. chopped onion
1/2 tsp. salt
1/8 tsp. pepper
1 c. shredded Swiss cheese
1/2 c. cracker crumbs
1 Tb. melted butter


Directions

Cook corn in boiling salted water 2-3 min. Drain and combine with milk, egg, onion, salt, pepper and Swiss cheese. Place in greased 10X6X1 1/2" casserole.


Toss cracker crumbs with butter. Sprinkle over corn mixture. Bake in 350º oven for 30-35 min. Let set a few min. before serving.
