This is a great weeknight recipe. The family can add their own toppings of salsa, sour cream, shredded lettuce, guacamole, etc.
Ingredients You'll Need
For the Cornbread:
¾ c. cornmeal
¼ c. GGFG Baking Mix, or mix of your choice
1 T. sugar
1 t. baking powder
½ t. freshly ground sea salt
1 egg
½ c. sour cream
2 T. butter, melted
1 c. sharp cheddar, shredded
For the Filling:
1 T. oil
1 onion, chopped
1 sweet pepper, chopped (optional)
4 cloves garlic, minced
1 lb. grass fed ground beef
2 T. chili powder
1 t. cumin
1 can black beans, rinsed and drained
1 can corn, drained
1 can fire roasted diced tomatoes w green chilis (do not drain)
1 c. shredded cheddar
salt and pepper to taste
Coarsely chopped fresh cilantro for serving
Directions
Make cornbread, mix dry ingredients together in a bowl. Mix sour cream, egg, and melted butter together, stir into dry ingredients, stir in cheese, then set mixture aside. Meanwhile brown meat in skillet with onion, sweet pepper, and garlic. When meat is browned and veggies are tender, drain off fat. Stir in spices, salt and pepper, corn, black beans, and tomatoes. Stir in cheese. Spoon cornbread over top. Bake in an oven preheated to 350 F until cornbread is golden, about 30 minutes. Serve immediately.
