6 medium artichokes
1 1/2 c. flavored bread crumbs
1/2 c. Parmesan cheese
1 Tbsp. chopped parsley
1 Tbsp. olive oil
1/2 tsp. garlic powder
1 (7 oz.) can solid white
tuna, drained
1/2 tsp. salt
1 clove garlic
1 bay leaf
1 lemon, sliced
Directions
Cut off 1-inch slice from tops of artichokes and from
stem leaving a small stub. Cut tips from leaves and spread
leaves apart slightly. Soak artichokes in cold salted water 5
minutes. Drain upside down. Combine bread crumbs, cheese,
oil, parsley, garlic, tuna and salt. Fill each artichoke with
1/2 cup filling putting it between the leaves and in the
center. Place artichokes in 4 quart saucepan. Add 1 1/2 cups
water; add garlic, bay leaf and lemon slices. Bring to boil.
Cover and simmer 1 to 2 hours until artichokes are tender. Add
more water, if necessary. Serve warm or cold. Serves 6 to 12.
