Why I Love This Recipe


Ingredients You'll Need

1/2 package of your favorite meat substitute
OR
1/2 lb tofu
1 package taco seasoning (or make your own)
1/2 can black beans
1/2 can refried beans
1/2 cup cooked rice (mexican or brown)
1 can corn
1 small can tomato sauce
a few handfuls of tortilla chips
1/2 medium onion, diced
1-3 cloves garlic, minced
non-stick cooking spray
2 cups jack or cheddar cheese
cumin to taste
cayenne to taste


Directions

Spray pan with non stick spray. Cook onion and garlic in seperate pan. Add the meat substitute or tofu; cook for a few minutes. Add taco seasoning, adding the amount of water called for on the taco seasoning package. Cook for a few minutes, add tomato sauce and corn. Stir in cumin and cayenne to taste. (Should only need a pinch, if any.) Cook a few more minutes.


Put chips on bottom of a deep 9 inch casserole dish (crunched a little bit, not too small). Add rice, then mixture from pan over chips, then cheese, black beans, chips, rice, mixture, refried beans, rice, cheese, mixture.


Cover casserole dish and bake at 350 degrees for 15-20 minutes or until hot. Uncover, add another layer of cheese and crunched chips, bake 5 more minutes.
