Taco Chicken Casserole

This is a family favorite at reunions and get-togethers, they tell me not to come unless I bring this with me.

Ingredients You'll Need
2 pkg each; mushroom rice and broccoli cheese rice
1 can mild Ro-tel
Velveeta; cube half, slice the other half
2 large cans chicken, or one shredded rotisserie chicken
1 small can mushrooms, diced or minced (I run mine through the food processor)
Jalapenos, fresh or jarred (optional)
1 can diced green chilies
1 pkt Taco Seasoning
Disposable Roasting Pan sprayed with cooking spray
Cook rice together per pkg directions. Add Ro-tel, mushrooms, chilies, chicken, taco season, and diced Velveeta until combined. Pour mixture into prepared roasting pan. Add slices of Velveeta around pan. If using jalapenos, add them around the top of the mixture. Cook on 350 for 30-45 minutes. Feeds about 20 people.
