Ingredients You'll Need

TACO GUACAMOLE

600 GR AVOCADO
200 GR PEELED TOMATO DICE
100 GR RED ONION
10 GR SEEDED MUSTARD
15 GR WASABI KIZAMI
6 GR FLEUR DE SEL
15 GR LIME JUICE
4 GR CRACKED BLACK PEPPER
15 GR KIMCHI SAUCE
15 GR EXTRA VIRGIN OLIVE OIL
20g MANGO DICE

TACO INGREDIENTS

30 GR BLUE RAB CRAB
70 GR HAMACHI\ SALMON
10 GR POMEGRANATE
10 GR WASABI MAYO
60 GR GUACAMOLE
10 GR RED CABBAGE
5 GR TOMATO DICE
TOBIKO ROE
80 of each DICED TUNA/ HAMACHI / SALMON )
2GR Salt
5GR LIME JUICE
4 HARD CORN TACO SHELLS


Directions

• To Make the Guacamole simply place all of the ingredients except for the mango into a pestle and mortar and pound until they are well incorporated but still chunky.


• Carefully fold in the mango.


• Adjust the seasoning if needed.


• Place your taco shells in a 180 degree Celsius oven for 4 minutes to ensure they are crispy and to bring out the aromas of the corn.


• Combine the Diced fish, salt, and lime juice. Stir well and taste for balanced in salt and acidity of the lime.


• Add the remaining ingredients and fill the taco shells finishing with crab meat on the top and tobiko roe.
